Sunflower Butter Cookies



So what do you do when you are craving peanut butter cookies, but can't eat peanut butter?  Or even eat eggs?  You hit the internet.  I found an interesting option that I adjusted to our family.

You will need:

  • 1 cup of Sunbutter (or other sunbutter brand..even make your own.  We do)..You can use almond butter or peanut butter if you do not have an allergy.
  • 2 can chick peas, drained, rinsed and patted dry
  • 1/4 cup honey
  • 2 tsp baking powder
  • 1/2 tsp sea salt (unless your nut butter contains salt..be careful then)
  • 1/2 cup Enjoy Life chocolate chips (sometimes I add a little more)



I put all the ingredients in the food processor and started mixing.  Makes a very smooth paste.  Fold the chocolate chips in last.


Used a cookie scoop and it was nice and thick.  Bake them at 350 for about 8-10 minutes.  Don't overbake.  I usually stick to about 8 minutes.  I let them cool on the sheet while I put another batch in.  Then use a spatula to remove them carefully on to a cooling rack.  If moved too much when they are warm, they tend to fall apart.  Baked a batch and thought they needed to be a little sweeter.


So I added a touch more honey...and without thinking just ran it with my food processor.  Yeah they became chocolate sunbutter cookies.


They baked a little flatter, but it didn't matter....soooo good.  Joey absolutely LOVES these cookies.  All the kids do.
