No Bake Cookies (GF & Oat free)



We are learning to be an allergy friendly.  We have issues with almost all major allergens, including oat.  So I have figured it out a no bake cookie that we can all eat.  All the kids have given this recipe "all thumbs" up.

No Bake Cookies (GF & Oat free)

Ingredients:
2 cups quinoa flakes
1 cup natural peanut butter (You can use chunky or creamy..or any nut butter of choice)
1 cup cocoa powder
1 cup organic cane sugar (you can add a little more if you like sweeter)
1 cup coconut oil
2 tsp sea salt

Melt coconut oil and add peanut butter.  Melt together on low heat (watch carefully).  Add sugar, cocoa powder, and salt.  Continue stirring until ingredients are melted together.  Remove from heat.  Stir in quinoa flakes.  Allow to sit for 5 minutes.

Use cookie scoop to place dough on cookie sheets.  I press them a little flat and then put in the freezer about 15 minutes.  I do these in batches.



Store in fridge or freezer in a baggie or storage container.  The freezer will leave them very hard, so we usually just store in fridge.  They rarely last more than a day.

***Make sure to use quinoa flakes, not regular quinoa.  This makes a big difference in your cookie.  This is the flakes that we buy.  I use them in a lot of recipes.
