Menu Monday




WOW!!!  Life just keeps getting busier for me.  I have finished my TEFL course and completed my certification over the weekend. Now to start applying for jobs, which is becoming harder than I thought.  I am teaching a few more courses this week on Outschool.com.  So my time is limited this week.  I'm struggling to balance cooking, cleaning, work, and teaching.

Sunday
B- Pecan pie muffins - these were a favorite!!!
L - Pork taquitos - Just shredded pork and cheese in corn shells and baked.  I sprayed them with cooking spray to crisp them more.
D - Shredded pork, rice and broccoli w/ cheese (I smoked a huge pork loin on Saturday)

Monday
B - Applesauce pancakes
L-  Leftovers
D - Hashbrown casserole 
Snack - hummus and crackers

Tuesday
B- Potato latkes
L - Quick Chicken and dumplings
D - ravioli and meatball bake w/ garlic bread sticks (This is super easy...premade ravioli, meatballs, and an extra pizza crust!!)
Snack - Apple slices / celery  / carrots

Wednesday
B- Cereal
L- Soup and sandwiches
D - Turkey and stuffing
Snack - Popcorn

Thursday
B - Oatmeal/Cream of Wheat/Grits
L - Baked ravioli
D - Creamy turkey and biscuits
Snack - Apples and frozen grapes

Friday
B - Sweet potato hash
L -  Russian geography meal 
D - Mandolorian night - creamy frog past made with tie fighter noodles (bow tie pasta)
Snack - Peanut butter crackers

Saturday
B - Maple pancake muffins
L - Baked turkey sandwiches
D - Leftovers / wraps
Snack - Apple/Pumpkin cookies

I got a turkey for almost nothing thanks to Ibotta!!  Have you tried Ibotta lately?  You need to check it out.  I was able to get 20.00 in free food that included 10.00 off of a turkey!!  So between the $13.00 pork loin that they ate Saturday through Wednesday, and the $5.00 turkey....protein was covered for the week!!


***This is important.....some days I change things around.****  I print a menu and keep it on the cabinet.  If something happens, I change the menu in pencil.  I make sure to keep track at the bottom of the menu of the meals that get moved, and we still have the ingredients for.  

This biggest thing to remember.... BE FLEXIBLE!!  I cannot express this enough.  Do not down yourself if you need to move your menu around.  You might be exhausted, need to work over, or a sports practice gets moved....all these things have happened to me in the last few weeks.  Flexibility is the key.  I also have given up some control in the kitchen and make sure that the kids are involved as much as possible in making meals.  Some day they will be able to cook the entire meal themselves!!  Whoohooo!!
