Menu Monday

 




I can't believe that it will be December.  It is crazy how fast, and yet how slow this year has been.  I'll be honest, other than limiting activities in some areas of our life, my life has only gotten busier.  Since I started teaching on Outschool.com, life has stayed very busy.

FYI...I made cranberry chicken last week and it was not a hit here.  It's just chicken thigh, canned cranberry, french dressing cooked together in slow cooker or Instant Pot.  They liked the rice...lol!  But not the chicken so much.

Sunday 
B- Breakfast pizza
L - Leftovers
D - Leftovers - we had a ton of food to use up
Snack - Popcorn

Monday
B - Leftover breakfast pizza
L - More leftovers...we had a ton of food cooked up and no freezer space
D - Roast (instant pot), mashed potatoes, gravy, corn
Snack - Banana bread

Tuesday
B - Oatmeal or grits
L- Hot chicken sandwiches
D - Chili and cornbread
Snack - pumpkin pie dip and graham crackers

Wednesday
B - Loaded tater tot waffles
L - Potato soup w/ ham and cheese
D - Pour a Pan cheeseburger casserole
Snack - P3 packets

Thursday
B - Fried potato hash
L - Chicken and dumplings
D - Dorito taco casserole bake
Snack - Apple slices

Friday
B - Cereal/Poptarts
L - Korean rice bowls (I doubled this recipe last week and froze some for lunch this week)
D - Geography Meal - Bolognese - We are learning about Italy
Snack - Popcorn

Saturday
B - Apple bread
L - Soup/Leftovers
D - DIY KFC Potato bowls
Snack - Oatmeal chocolate chip cookies

***This is important.....some days I change things around.****  I print a menu and keep it on the cabinet.  If something happens, I change the menu in pencil.  I make sure to keep track at the bottom of the menu of the meals that get moved, and we still have the ingredients for.  

This biggest thing to remember.... BE FLEXIBLE!!  I cannot express this enough.  Do not down yourself if you need to move your menu around.  You might be exhausted, need to work over, or a sports practice gets moved....all these things have happened to me in the last few weeks.  Flexibility is the key.  I also have given up some control in the kitchen and make sure that the kids are involved as much as possible in making meals.  Some day they will be able to cook the entire meal themselves!!  Whoohooo!!

  1. This is the right blog for anyone who wants to find out about this topic. You realize so much its almost hard to argue with you (not that I actually would want…HaHa). You definitely put a new spin on a topic thats been written about for years. Gretuff, just great!
