What we are eating this week.....

I love this clipart I found online...I do this even though I know most days what I am cooking.  I lose track of time and then end up scrambling to get dinner done.

I have not printed our menus for a month now, and I need to get back on track.

I made a change.  I won't be planning breakfast meals anymore.  We'll do smoothies, cereal, fruit, or leftovers even.  Who says you have to have eggs in the morning?!?!

L- Sandwiches and soup
D- roast beef with veggies

L- beef hash (with leftovers from the roast beef)
D- Chicken and veggie stirfry

L- Packed lunch for the girls and I (Black bean hummus and crackers/veggies), chili fries for Joe and the boys
D- Chicken fried chicken with mashed potatoes and green beans

L- meatball casserole
D- Baked Chicken w/ mashed carrots & roasted potatoes

L- clam chowder and crackers
D- Jambalaya (with leftover chicken and hm chicken broth from Wednesday)

L- Fried vegetarian burgers (hm with chick peas)
D- Unstuffed pepper casserole

L- Leftovers
D- Fried cod and baked potatoes

Possible snacks:
chocolate pudding
hummus and crackers
rice krispies
chocolate cake

The Meatball casserole will be new to us.  I will post when I figure it out.  I haven't made clam chowder in ages, but got a deal on clams at Costco last week.  So yummy...yummy....yummy!  I'm trying to take leftovers and include them in lunch/breakfast plans.
